Okay, you've decided you want to open a shop in the airport. That's great, but there's more to getting into this space than meets the eye. You can't just go knock on someone's door and announce your intentions to open your doors. You've got to determine the right partnership model for your business, figure out a financing plan and write an RFP that helps your candidacy rather than hurts. You also have to become familiar with the challenges of operating at an airport: high build-out costs, the cost of labor, hiring in a tight labor market to a location with challenges beyond those of your street operation, lengthened hours of operation and condensed menus.
